I have been interested in food and have seen how it affects our body since my father was diagnosed with high blood pressure, stomach ulcers and high cholesterol in 1958 and given 6 month to live. Many dietary changes were introduced to my family through the “Bernard Jensen Health Club”. My whole family use to go along to monthly meetings and this has given me the back ground to the importance of food in our daily lives.
Vegetables were steamed, meats grilled not fried, fresh vegetables juices instead of cordials which are full of sugar and artificial flavours, nutritious fresh vegetables with home grown sprouts and fresh bitter green salads from the garden.
I’m also a Coeliac with other allergies which has made me be more sensitive and understanding of my clients needs. I was always a sickly child with headaches, stomach ache and bowel pains which the doctor said were growing pains. I was sensitive to everything and especially the chemicals in my environment.
When I became a mother with a toddler and a breastfeeding baby, I developed arthritis in my feet and ankles as well as my hands and wrists. The doctors told me to enjoy life now as I would be in a wheelchair by the time I was 40 years old, as my bones were like that of an elderly persons.
This sent me on a journey to find the reason for my state of ill-health. Finding I was allergic to wheat and gluten was hard, but I was please to know the cause of my problems. Going off gluten products saw me lose unwanted weight but the greatest benefit has been my joints which improved so much so, that these days I can go tramping with 20 kg backpack.
